Introducing Atomic Cowboy: Overland Park’s Newest Eatery
Say hello to Atomic Cowboy, Overland Park’s fresh dining spot that brings breakfast, pizza, and a bar together in one cool place. Opening its doors on Tuesday, January 23, 2024, at 7101 W. 80th St., this joint offers a tasty menu for everyone in the Overland Park neighborhood.
Triple Treat: Breakfast, Pizza, and Bar
The genius idea behind Atomic Cowboy is combining Denver Biscuit Co.’s breakfast treats (8 a.m. to 2 p.m.) with Fat Sully’s Pizza’s yummy slices (starting 11 a.m.). Plus, the bar’s open all day, so you can chill with a drink and catch a game. And hey, there’s arcade games and pool for extra fun!
Family-Friendly Fun
Founder Drew Shader wants Atomic Cowboy to be a go-to spot for Overland Park families. So, parents, bring your kids for early dinners with pizza and burgers on the menu.
From Kansas City to Overland Park
After opening its first Kansas City spot in Westport at 4144 Pennsylvania Ave. in 2020, Atomic Cowboy is stoked to bring its cool concept to downtown Overland Park. The new spot even has a walk-up “slice window” for Fat Sully’s mega build-your-own pizza slices (when it’s nice out).
Must-Try Menu Items and Outdoor Seating
For breakfast, don’t miss the biscuits and gravy or the “Lola” – a fried chicken and bacon biscuit sandwich with maple syrup. Plus, there’s a sweet outdoor patio for al fresco dining when the weather’s good.
The Story of Atomic Cowboy
It all started 20 years ago with a bar in Denver. Then, Drew Shader added Fat Sully’s Pizza four years later. His “biscuit bus” idea eventually joined the mix, creating the awesome Atomic Cowboy we know today. Now, there are nine locations, with seven in Colorado.
Hours and Future Plans
At first, Overland Park’s Atomic Cowboy will be open from 8 a.m. to midnight. They might extend hours later on. If you want to live near cool dining spots like Atomic Cowboy, contact a real estate agent to check out options in the area, like Leawood and Olathe Kansas.
