Atomic Cowboy: A Cool Three-in-One Dining Spot in Overland Park

Get ready, Overland Park! A new breakfast joint, pizza place, and bar are coming together under one roof. Atomic Cowboy, a fresh three-in-one dining idea, opens its doors on Tuesday, January 23, 2024, at 7101 W. 80th St. This one-of-a-kind restaurant wants to please everyone in Overland Park with a wide variety of dishes and a cozy, family-friendly vibe.

From Morning Bites to Pizza Delights

Atomic Cowboy kicks off the day with tasty breakfast stuff from the Denver Biscuit Co. side of things between 8 a.m. and 2 p.m. After 11 a.m., Fat Sully’s Pizza takes over, dishing out yummy pizza slices to hit the spot. The bar’s open all day, so you can enjoy drinks and catch your favorite sports games. For extra fun, there are arcade games and a pool table in the corner.

Founder Drew Shader wants to make sure families in Overland Park feel welcome. He invites parents to bring their kids for early dinners with pizza and burgers.

From Kansas City to Downtown Overland Park

After launching its first Kansas City spot in Westport at 4144 Pennsylvania Ave. in 2020, Atomic Cowboy is pumped to bring its cool idea to downtown Overland Park. The new spot has a walk-up “slice window” where you can order and eat Fat Sully’s huge build-your-own pizza slices outside (if the weather’s nice).

Top Menu Picks and Outdoor Seating

For breakfast, people love the biscuits and gravy and the “Lola” – a fried chicken and bacon biscuit sandwich with a drizzle of maple syrup. The restaurant also has an outdoor patio that can fit lots of folks, so you can eat outside when the weather’s good.

The Story of Atomic Cowboy

Atomic Cowboy started as a bar in Denver 20 years ago. It changed into its current form when Shader added Fat Sully’s Pizza four years later. His separate “biscuit bus” idea eventually joined the bar too, making the awesome mix of dining choices you see at Atomic Cowboy today. Now, the restaurant has nine locations, with seven in Colorado.

Hours of Operation
