Atomic Cowboy Grand Opening: A Three-in-One Dining Experience in Overland Park

Overland Park welcomes a new and unique dining spot, Atomic Cowboy, at 7101 W. 80th St. It’s a combo of breakfast restaurant, pizza place, and bar, all in one. This cool dining idea aims to please the different tastes of the Overland Park community by offering a wide range of dishes and a comfy, family-friendly atmosphere.

Breakfast, Pizza, and More under One Roof

From 8 a.m. to 2 p.m., Atomic Cowboy serves breakfast items from the Denver Biscuit Co. side of the biz. After 11 a.m., customers can enjoy Fat Sully’s Pizza slices. The bar is open all day, so patrons can sip cocktails and watch their favorite sports teams compete. Arcade games and a billiards table are also available in the corner of the restaurant for added fun. Founder Drew Shader emphasizes the importance of catering to Overland Park families, encouraging parents to bring their kids in for early dinners featuring pizza and hamburgers.

Expanding from Kansas City to Downtown Overland Park

After opening its first Kansas City spot in Westport at 4144 Pennsylvania Ave. in 2020, Atomic Cowboy is now excited to bring its cool concept to downtown Overland Park. The new location features a walk-up “slice window” where customers can order and enjoy Fat Sully’s mega build-your-own pizza slices outdoors (weather permitting).

Popular Menu Items and Outdoor Seating

On the breakfast side of the menu, popular items include biscuits and gravy and the “Lola” – a fried chicken and bacon biscuit sandwich drizzled with maple syrup. The restaurant also offers an outdoor patio that can seat dozens of patrons, providing an enjoyable al fresco dining experience when weather conditions permit.

The Evolution of Atomic Cowboy

Starting as a bar in Denver 20 years ago, Atomic Cowboy changed into its current concept when Shader added Fat Sully’s Pizza to the place four years later. His separate “biscuit bus” idea eventually made its way into the bar as well, resulting in the unique combo of dining options available at Atomic Cowboy today. The restaurant now has nine locations, with seven in Colorado.

Operating Hours

The Overland Park Atomic Cowboy location will initially be open from 8 a.m. to midnight, with potential plans to extend its hours in the future.
