Get ready, Overland Park! A fantastic new dining spot is coming your way. Atomic Cowboy, a unique combo of breakfast joint, pizza place, and bar, is opening its doors at 7101 W. 80th St. on Tuesday. This one-of-a-kind eatery is sure to draw foodies from Overland Park, Kansas City, and Leawood.

Three Tasty Options in One Place

From 8 a.m. to 2 p.m., Denver Biscuit Co. will serve up biscuits and other breakfast goodies to start your day right. Then, from 11 a.m. onwards, Fat Sully’s Pizza takes center stage, dishing out scrumptious pizza slices. And all day long, you can chill at the bar, sipping cocktails and catching the game. With arcade games and a pool table, Atomic Cowboy is fun for all ages. Founder Drew Shader wants to make families in Overland Park feel welcome, inviting them to enjoy pizza and burgers for an early dinner.

Atomic Cowboy Expands to Downtown Overland Park

After the success of its Kansas City location in Westport (4144 Pennsylvania Ave.) in 2020, Atomic Cowboy is thrilled to bring its cool concept to downtown Overland Park. Shader thinks the area’s vibe is just right for his restaurant.

One cool feature at the Overland Park spot is the walk-up “slice window,” where you can order and eat build-your-own pizza slices outside. But you might want to wait until the weather warms up to try it!

Yummy Menu Picks and Outdoor Seating

For breakfast, popular choices include biscuits and gravy and the “Lola” – a drool-worthy fried chicken and bacon biscuit sandwich with maple syrup. The outdoor patio has room for lots of guests, but maybe not the best spot during windchill warnings.

The Story of Atomic Cowboy

Atomic Cowboy started as just a bar in Denver 20 years ago. Four years later, Shader added Fat Sully’s, a pizza place. His other idea, the “biscuit bus,” eventually joined the bar too. This mix of Shader’s businesses turned into the Atomic Cowboy we know today.

Now with nine locations, including seven in Colorado, Overland Park’s Atomic Cowboy is the newest member of the family. At first, it’ll be open from 8 a.m. to midnight, but Shader says they might stay open later down the road.
