Atomic Cowboy Grand Opening: A Unique Dining Experience in Overland Park

Get ready, Overland Park! A new spot to eat, drink, and have fun is opening at 7101 W. 80th St. Atomic Cowboy is a cool place where you can enjoy breakfast, pizza, and drinks all in one. People living in Overland Park, Kansas City, Leawood, and Olathe Kansas will love this new hangout.

A One-of-a-Kind Culinary Concept

Atomic Cowboy has something for everyone. From 8 a.m. to 2 p.m., you can get tasty biscuits and breakfast stuff from the Denver Biscuit Co. part of the place. After 11 a.m., you can grab a slice of Fat Sully’s Pizza. The bar is open all day, so you can have a drink and watch sports. There are also arcade games and a pool table for more fun.

Catering to the Families of Overland Park

Drew Shader, the guy who started Atomic Cowboy, wants to make sure families in Overland Park feel welcome. Parents can bring their kids for early dinners with pizza and burgers. Atomic Cowboy opened another spot in Kansas City in 2020, and now they’re excited to be in downtown Overland Park too.

Outdoor Dining and Popular Menu Items

You can even order Atomic Cowboy’s huge build-your-own pizza slices from a walk-up window and eat outside. But maybe wait until it’s not so cold in Kansas City. Some favorite breakfast items are biscuits and gravy and the “Lola” – a fried chicken and bacon biscuit sandwich with maple syrup. There’s also a big outdoor patio, but don’t sit there when it’s super cold.

The Evolution of Atomic Cowboy

Atomic Cowboy started as a bar in Denver 20 years ago. Four years later, Drew Shader added a pizza place inside, called Fat Sully’s. He also had a “biscuit bus” that eventually became part of the bar too. Now, there are nine Atomic Cowboy locations, including seven in Colorado.
