Atomic Cowboy: A Tasty Trio

From 8 a.m. to 2 p.m., Denver Biscuit Co. will serve up biscuits and other breakfast goodies to start your day right. After 11 a.m., Fat Sully’s Pizza takes over, dishing out scrumptious pizza slices. And all day long, you can chill at the bar, sipping cocktails and cheering on your favorite sports teams. With arcade games and a pool table, there’s fun for all ages. Founder Drew Shader is all about welcoming Overland Park families, inviting them to bring their kids for an early dinner with pizza and burgers.

Bringing Atomic Cowboy to Downtown Overland Park

After a successful launch in Kansas City’s Westport at 4144 Pennsylvania Ave. in 2020, Atomic Cowboy is stoked to bring its cool concept to downtown Overland Park. Shader thinks the area’s vibe is a perfect match for the restaurant.

A cool feature at the Overland Park spot is the walk-up “slice window.” Here, you can order and enjoy Atomic Cowboy’s signature build-your-own pizza slices outside. But you might want to wait until Kansas City’s chilly weather warms up a bit.

For breakfast, fan favorites include biscuits and gravy and the “Lola” – a drool-worthy fried chicken and bacon biscuit sandwich with a drizzle of maple syrup. The outdoor patio has room for plenty of guests, but it might not be the best choice when there’s a windchill warning.

The Story of Atomic Cowboy

Atomic Cowboy started in Denver 20 years ago as just a bar. Four years later, Shader added Fat Sully’s, a pizza joint, to the mix. His other separate idea, the “biscuit bus,” eventually found its way into the bar too. This blend of Shader’s business ventures turned into the Atomic Cowboy concept we know today.

With nine locations now up and running, including seven in Colorado, the Overland Park spot is the newest member of the Atomic Cowboy family. At first, the Overland Park location will be open from 8 a.m. until midnight, but Shader hinted that they might extend the hours later on.
