Atomic Cowboy Grand Opening: A Unique Dining Experience in Overland Park

Overland Park’s newest breakfast restaurant, pizza place, and bar are all set to open under one roof on Tuesday at 7101 W. 80th St. Atomic Cowboy is a three-in-one dining concept that will provide residents of Overland Park, Kansas City, Leawood, and Olathe Kansas with a unique and enjoyable culinary experience.

A One-of-a-Kind Culinary Concept

From 8 a.m. to 2 p.m., Atomic Cowboy will serve delicious biscuits and other breakfast items from the Denver Biscuit Co. side of the business. After 11 a.m., guests can enjoy Fat Sully’s Pizza slices. The bar area will be open all day, allowing patrons to sip cocktails and watch their favorite sports teams face off. Arcade games and a billiards table are tucked in the corner of the restaurant, providing entertainment for all ages.

Catering to the Families of Overland Park

Founder Drew Shader emphasizes the importance of catering to Overland Park families, encouraging parents to bring their children in for early dinners featuring pizza and hamburgers. Atomic Cowboy opened its other Kansas City location in Westport in 2020, and now Shader’s team is excited to bring the concept to downtown Overland Park, where it perfectly fits the local vibe.

Outdoor Dining and Popular Menu Items

Guests can order and enjoy Atomic Cowboy’s mega build-your-own pizza slices outside, thanks to the walk-up “slice window.” However, this option may be best enjoyed once Kansas City clears its chilling temperatures. Popular breakfast menu items include biscuits and gravy and the “Lola” – a fried chicken and bacon biscuit sandwich drizzled in maple syrup. An outdoor patio can seat dozens of patrons, though it is not advised during windchill warnings.

The Evolution of Atomic Cowboy

Atomic Cowboy started as a bar in Denver 20 years ago. Four years later, Shader added a pizza restaurant inside, Fat Sully’s, and his separate “biscuit bus” concept eventually migrated into the bar as well. This combination of Shader’s entrepreneurial ventures led to the creation of the unique Atomic Cowboy concept we know today, with nine locations, including seven in Colorado.
