Get ready, Overland Park, Kansas City, Leawood, and Olathe Kansas folks! Atomic Cowboy, a unique breakfast, pizza, and bar joint, is opening its doors at 7101 W. 80th St. on Tuesday. This cool three-in-one eatery is perfect for families wanting a variety of tasty food in a chill and friendly atmosphere.

Breakfast, Pizza, and Bar: A Tasty Trio

From 8 a.m. to 2 p.m., Atomic Cowboy dishes out yummy biscuits and other breakfast goodies from the Denver Biscuit Co. side of the biz. After 11 a.m., guests can chow down on amazing slices of Fat Sully’s Pizza. The bar area is open all day, so you can kick back with cocktails and watch your fave sports teams on-screen. Plus, there are arcade games and a pool table for extra fun, making it a blast for all ages.

Family-Friendly Eats in Overland Park

Founder Drew Shader knows it’s important to cater to Overland Park families. He encourages parents to bring their kids in for early dinners with pizza and burgers. After the big success of Atomic Cowboy’s Kansas City spot in Westport in 2020, Shader and his crew are stoked to bring their one-of-a-kind concept to downtown Overland Park, where it fits the vibe just right.

Outdoor Dining and Must-Try Menu Items

Atomic Cowboy has a walk-up “slice window” for guests to order and enjoy their custom pizza slices outside, though it might be more popular when Kansas City’s cold temps warm up. Some breakfast faves include biscuits and gravy, and the “Lola” – a drool-worthy fried chicken and bacon biscuit sandwich with a drizzle of maple syrup. The outdoor patio can fit a bunch of people, but maybe not during windchill warnings.

Atomic Cowboy’s Journey

Atomic Cowboy began as a bar in Denver 20 years ago. Four years later, Shader added a pizza place inside, Fat Sully’s, and his other separate idea, the “biscuit bus,” eventually moved into the bar too. This mix of Shader’s business ventures led to the cool Atomic Cowboy concept we know today. The brand now has nine spots, with seven in Colorado.
