A Three-in-One Dining Adventure

Atomic Cowboy, the latest addition to Overland Park, is set to serve the public with a diverse range of culinary delights. From 8 a.m. to 2 p.m., customers can enjoy biscuits and other breakfast items from the Denver Biscuit Co. side of the business. After 11 a.m., Fat Sully’s Pizza will serve up scrumptious slices to satisfy your pizza cravings.

Visitors can also relax at the bar all day, sipping cocktails and watching their favorite sports teams in action. With arcade games and a billiards table, Atomic Cowboy offers entertainment for all ages. Founder Drew Shader emphasizes the restaurant’s commitment to catering to the families of Overland Park, inviting them to enjoy early dinners with pizza and hamburgers.

Expanding to Downtown Overland Park

After successfully opening their Kansas City location in Westport at 4144 Pennsylvania Ave. in 2020, Shader’s team is now excited to bring the Atomic Cowboy concept to downtown Overland Park. The location’s atmosphere and vibe are an excellent fit for the Atomic Cowboy brand.

One unique feature of the Overland Park location is the walk-up “slice window,” allowing customers to order and enjoy their mega build-your-own pizza slices outdoors. However, this option might be best saved for when Kansas City’s chilly temperatures subside.

Popular Menu Items and Outdoor Seating

Some popular menu items on the breakfast side include biscuits and gravy and the “Lola” – a fried chicken and bacon biscuit sandwich drizzled with maple syrup. The outdoor patio can seat dozens of patrons, but it is not advised during windchill warnings.

The Evolution of Atomic Cowboy

When Atomic Cowboy first started in Denver 20 years ago, it was strictly a bar. Four years later, Shader added a pizza restaurant inside – Fat Sully’s. His other, separate concept, the “biscuit bus,” eventually migrated into the bar as well. This combination of Shader’s entrepreneurial ventures has evolved into the Atomic Cowboy we know today.

Now boasting nine locations, with seven in Colorado, Atomic Cowboy continues to expand its unique dining experience. The Overland Park location will be open from 8 a.m. until midnight for now, but Shader mentioned that they may end up extending its hours in the future.
