Overland Park’s Newest Restaurant: Atomic Cowboy

Hey there, food lovers! If you’re in Overland Park, get ready for a treat. Atomic Cowboy, a three-in-one restaurant, is opening soon at 7101 W. 80th St. It’s got breakfast, pizza, and a bar all under one roof. So, whether you’re an early bird or a night owl, there’s something for everyone.

What’s on the Menu?

From 8 a.m. to 2 p.m., you can enjoy delicious biscuits and other breakfast items from the Denver Biscuit Co. side of the business. After 11 a.m., it’s time for some mouth-watering Fat Sully’s Pizza. And if you’re in the mood for a drink, the bar is open all day. Plus, there are arcade games and a billiards table for some extra fun.

Founder Drew Shader says they want to cater to the families of Overland Park. So, feel free to bring your kids for an early dinner of pizza or hamburgers.

Expanding to Kansas City

After opening their first Kansas City location in Westport in 2020, Atomic Cowboy is now bringing their unique concept to downtown Overland Park. Shader believes the area really fits their vibe. And if you’re in a hurry, you can even order a mega build-your-own pizza slice from their walk-up “slice window.”

Popular Menu Items

Some of the most popular items on the breakfast menu include biscuits and gravy and the “Lola” – a fried chicken and bacon biscuit sandwich drizzled in maple syrup. Yum! There’s also an outdoor patio that can seat dozens of patrons, perfect for when the Kansas City weather warms up.

The Story Behind Atomic Cowboy

Atomic Cowboy started in Denver 20 years ago as just a bar. Four years later, Shader added Fat Sully’s Pizza inside the bar. Eventually, his separate concept, the “biscuit bus,” also found its way into the bar. Today, Atomic Cowboy has nine locations, with seven in Colorado.

The Overland Park location will be open from 8 a.m. until midnight for now. But who knows? They might even extend their hours in the future.
